Amy McAlistar’s Organic Chicken Pasta
Organic Ingredients:
Free-range chicken breast, cubed in bite size chunks
Garlic, lots of it
Chicken broth (room temp. or warmed)
White wine (optional)
Red bell pepper
Mushrooms
Fresh basil
Prosciutto (optional, hot chorizo sausage if you're feeling spicy)
Parmesan Reggianno
Olive Oil
Butter
Cracked black pepper
Fresh thyme (optional, but if not fresh, don’t bother)
Salt to taste
Pasta (Amy uses bowties, or farfelle, seashells are good too)
Heat olive oil in pan (Amy uses cast iron, well seasoned)
Sear chicken with garlic and cracked pepper, but don’t cook through
Deglaze pan with wine or broth, pour into bowl and set aside
Start pasta according to directions
Add butter and more oil to pan
Saute mushrooms, red pepper, and garlic until shrooms are browned at the edges
Add chicken broth, simmering until pasta is done
Add chicken breast, simmer until chicken is just done, but not overdone
Add slices of prosciutto and fresh basil
Ladle over noodles in a bowl, grate fresh Parmesan Reggianno
